Rob's Peruvian Green Salsa

Food and cooking is my passion outside of synthesizers. Every day when I come home I am immediately tasked with cooking for my wife and 2 boys. We try to grow our own herbs and only buy organic, antibiotic free, and otherwise "clean" foods and meats. Home cooking is probably the most important hobby to pick up if you too are turned off by the quality of American processed foods and especially fast food.

I normally make this salsa to pair with grilled Peruvian style chicken (recipe in a future entry). However, it's excellent with any type of chicken or steak or even just on a chip. Its a favorite in the shop and hotly requested by my staff.

The recipe is Peruvian in spirit. You might find similar salsas in Peruvian restaurants but I doubt they will use as much or any mayo. 

Spice level is spicy but manageable for most people. 

Ingredients:
- Organic Mayonnaise - 1 and a 1/2 Cup
- 2 Bunches Cilantro - Stems Removed
- 5 average sized Jalapeńos - Stems Removed.
- 1 Serrano Pepper - Skip, Half, or Whole (without stem) depending on your heat preferences
- 10-15 Basil Leaves (any variety is fine)
- 2 heaping tsp Aji Amarillo Paste. This can't be subbed but it can be skipped. Its a very important ingredient and can be found in latin markets as a paste or as frozen peppers, in which case use 2 peppers. Amazon carries it.
- 4oz of feta cheese, queso fresco, or parmesan. This is your chance to make it your own.
- Salt to taste

In a blender or large food processor, add everything except the salt & serrano pepper. Blend until creamy, about 1 minute. Taste your creation and salt to taste. The salt content can vary with your choice in cheese but I find myself using 2 pinches. 

If more heat is desired, add half of the serrano pepper. If even more heat is desired, add in the rest of the serrano. 

Optional:
Mess around with this and also consider adding some lime juice, avocado, or even peanuts. Adding in a quarter of a red onion is also advisable but does raise the heat level.
